Amazing Chicken Salad Vegan Wrap

One of the hardest parts of transitioning to a plant based diet is letting go of your favorite meals. One of my favorite meat based meals is a great chicken salad wrap or chicken salad sandwich. This is the kind of thing that until now did not have a suitable vegan alternative.
In my quest to find suitable meals to replace my previous meat based diet I came across an amazing vegan wrap at a local grocery store. This wrap not only tasted like a chicken salad wrap but was 100% vegan. I used this as an inspiration to develop this recipe.
Vegan Tofu Cashew Wrap
4hrs prep, 15 minutes to assemble
1 cup cashews
3 Tbsp of nutritional yeast
1 block of tofu
1 small onion (red or scallion)
1 garlic clove
3 Tbsp of Veganaisse
2 Tbsp of Dijan Mustard
1/2 tsp of onion powder
1/4 tsp of garlic powder
2 Tbsp of Liquid aminos or soy sauce
1 tsp salt
dash of black pepper
1 package pre sliced carrots
1 small package of spinach
Begin by soaking the Cashews in water for 4 - 6 hours. If in a rush boil for 15 minutes. The soaking idea allows the entire mix to cool down quicker since the cashews are cold.
Blend the cashews in high speed blender and add to large mixing bowl.
Use food processor to pulverize tofu and add to mixing bowl with cashew mix. Add small onion (red or scallion) and garlic clove to food processor for fine mince.
Add remaining ingredients. (nutritional yeast, liquid aminos, Dijon mustard, veganaisse , salt, pepper, onion powder, garlic powder) Fold ingredients together until mixed thoroughly. Once mixed thoroughly place the mixture in the refrigerator for 2 hrs.
Place a heaping scoop of the mixture on the tortilla similar to making a taco. Add a small handful of spinach and pinch of sliced carrots. Roll and enjoy. This wrap works great in a bag lunch or as a meal you bring camping.
